The wastes from olive oil and table olives pose some strong issues due to the high toxicity of the phytochemicals. This paper proposes a short overview of the Italian rules and laws, as well as of the chemico-physical approaches proposed for their detoxification. Finally, there is a focus on the bioremediation, i.e. on the biological detoxification of this kind of waste, and on its effect on the producers of olive oil and table olives, along with a short description of some possible future perspectives.
