The LCA methodology has been applied to highlight the environmental hot spots of the production steps of green table olives produced by the most common method used in the world Spanish-style. The agricultural practices have also been taken into account. The analysis of the input and output material and energy flows has enabled us to propose a hypothesis for reducing the impacts on the environment.

Abstract
