Enterobacteria represent an issue for both food quality and safety; their taxonomy and classification have been extensively revised, along with the description of their implication for humans. This chapter proposes a synopsis of the most important advances in the taxonomy of the classification of Enterobacteriaceae, along with a focus on their implications on food as spoilers, along with a description of health issues (biofilm formation, antimicrobial resistance) and their use as test microorganisms for good manufacturing practices.
