We carried out a preliminary assessment of surplus food at Coop Alleanza 3.0 by analyzing “the surplus food rate” of turnover (in value). This evaluation was related to size of the hypermarkets located in the Puglia and Basilicata regions in 2019 and concerned fruits and vegetables. The assessment was carried out with Kendall’s tau-b coefficient with ties ( τtest) and the coefficient of determination (R²). The results showed a significant (α = 0.05) tau-b coefficient with a very high negative correlation (τtest = -0.73), which corresponds to a high coefficient of determination (R² =77%), denoting a tendency towards model goodness. Therefore, an increase in the store’s surface area seems to be correlated with smaller food surpluses. The confirmation of the results for other product sectors should stimulate a management control system and determine the adoption of adequate working practices.
