The aim of this paper is to analyze the reasons of food and food waste surpluses. The analysis focuses on the retail phase and on food recovery initiatives. The recovery strategies cover the sale at reduced prices for those products whose expiration date is near, both the donation initiatives of unsold products, not consumer accepted because they have some flaws but do not cause harm to the health of the consumer. This paper analyzes the strategies implemented by the GDO, in particular by Coop Alleanza 3.0. In Coop system the food waste came to represent only 50% of that impact in all Italian large retail chains. In particular, the results of the donation initiatives for social purposes are analyzed with the “Ugly but Good” and “Good End” projects activated in the period 2013- 2019.
