LCA methodology was used to identify the environmental burdens associated with the production and processing of tomato puree, with the end-of-life excluded from the analysis. The functional unit was represented by 100 kg. of picked tomatoes. Both primary and secondary data were considered; the consumption of energy and materials during the processes was measured, and the emissions into the air, soil and water were also quantified. PE and Ecoinvent databases were used for the data referring to the production of energy and materials. The CML 2001 impact assessment method was employed to analyse the environmental impact of the input and output measured during the inventory phase. The results of the CA enabled us to identify the “hot-spots” in the production chain of tomato derivatives. The analysis of the input and output materials and of the energy flows has led us to propose a hypothesis for reducing the impact of these products on the environment.
