Due to its social, economic and environmental impact, olive oil production plays an important role in the Southern EU member states. The wastes produced are a problem because of the time and the modalities in which they are produced and because of the quantity and nature of residues it generates. Composting is one of many solutions to the problem of organic waste disposal and it is acquiring increasing consent since it represents a valid form of waste valorisation. This paper introduces the situation of composting techniques applied to these residues and discusses their technical and economic feasibility.
