In recent years the interest in the use of natural compounds as additives to prevent bacterial and fungal growth has increased significantly. Several authors focused their attention on essential oils and natural compounds. Essential oils (EOs) are aromatic compounds liquids obtained by extraction from plant material, while volatile are gaseous molecules or moieties characterised by an high steam pressure. The aim of this work was to evaluate the effects of four different natural compounds – eugenol, trans-2-hexenal, hexanal, and limonene – at different concentrations (from 0 to 200 ppm) on the fate of Listeria monocytogenes and Escherichia coli O157:H7 inoculated in a model system and incubated at 37°C. Besides, the effectiveness of eugenol and trans-2-hexenal on microbial growth of two pathogen tested at 15°C was evaluated.
